Uses of Gelatine
As can be seen in the diagram below, gelatine has numerous and varied uses. In fruit jellies and marshmallows or hard and soft capsules it is the key ingredient. In other products such as yoghurt, ice cream and cream cheese it is used as a stabiliser and thickener. It is also used to simulate the mouthfeel of fat in fat-reduced food products. In the drinks industry, it is used in the clarification of juices.
